Union County had three 4-H members participate in the Special Foods Contest, held in conjunction with Lincoln County (two from Elk Point and one from Alcester). Each contestant must prepare a recipe in one and a half hours and they are judged on their food preparation techniques, nutrition and food safety knowledge and their ability to present a meal on an attractive place setting. The following are the recipes from the Elk Point participants.

Upside Down Tater Tot Casserole

Junior, Elk Point, Purple Ribbon

6 c tater tots, defrosted 1 c green beans 1 pound sausage

10.25 oz cream of mushroom soup 1 c French onions 1½ c mozzarella cheese

Turn oven on to 350 degrees. Brown the meat. Add cream of chicken soup and green beans and cook for one more minute. Layer the tater tots in the bottom of the pan. Spread the cheese on top. Pour mixture over this. Sprinkle onions on top. Bake for 25 minutes.

Elvis Presley Smoothie

1 cup vanilla yogurt 2 ripe bananas, frozen 2 cup fresh spinach 4 Tb peanut butter 1 tsp flax seeds

Blend, adding water as needed to blend.
